Aligote (pronounced AL – i – GO – TAY) is the “other” white grape from Burgundy. From a sustainable farm with minimal intervention, the grapes are all picked by hand. All occurs in stainless steel tanks. The fermentation occurring naturally. The wine ages on its lees for 8 months prior to bottling. It is then bottled unfiltered with minimal fining and without animal by-products, so it is vegan. The slight cloudiness in the wine is purposeful and a result of such little intervention. Therefore revealing its full the true character.
