The Perfect Summer Salad

Ingredients
  

  • 16 oz strawberries
  • 1 medium cucumber
  • 4 leaves fresh mint
  • 1/2 cup fat free feta
  • 1 cup brown rice or farro
  • 3-5 cups arugula

Dressing

  • 2 tbsp olive oil
  • 1 tbsp chopped shallot
  • 1 tsp honey
  • 1/2 orange (squeezed for juice)
  • 1 tbsp mint
  • 1 splash white wine vinegar

Instructions
 

  • Add strawberry, cucumber, mint, feta, and grain into a bowl.
  • In blender, add dressing ingredients and blend until smooth.
  • Add dressing into bowl with salad and stir until covered.
  • When ready to serve, mix in the arugula. This will keep in nice and crisp!
  • Top with protein of your choice (chicken, steak, or salmon would be delicious) or enjoy on its own!
