The Perfect Summer Salad
- 16 oz strawberries
- 1 medium cucumber
- 4 leaves fresh mint
- 1/2 cup fat free feta
- 1 cup brown rice or farro
- 3-5 cups arugula
- 2 tbsp olive oil
- 1 tbsp chopped shallot
- 1 tsp honey
- 1/2 orange (squeezed for juice)
- 1 tbsp mint
- 1 splash white wine vinegar
- Add strawberry, cucumber, mint, feta, and grain into a bowl.
- In blender, add dressing ingredients and blend until smooth.
- Add dressing into bowl with salad and stir until covered.
- When ready to serve, mix in the arugula. This will keep in nice and crisp!
- Top with protein of your choice (chicken, steak, or salmon would be delicious) or enjoy on its own!
