Nana McGaunn’s Chocolate Lava Cakes
Ingredients
- 6 oz bittersweet chocolate
- 2 oz semisweet chocolate
- 1 1/2 stick unsalted butter
- 1/2 cup all purpose flour
- 1/2 cup powdered sugar
- 3 eggs
- 3 egg yolks
- 1 tsp vanilla extract
Crème Fraîche Whipped Cream
- 1/3 cup crème fraîche
- 1/2 tsp vanilla extract
- 2 tbsp sugar
- 1 cup heavy whipping cream
Strawberry Compote:
- 2 cups strawberries
- splash of maple syrup
- Splash of vanilla extract
- Splash of Cointreau
Instructions
Chocolate Lava Cakes
- Preheat oven to 425.
- Grease 6 ramekins or custard cups.
- Heat chocolate and butter until melted together on stove or microwave.
- In a large bowl, combine chocolate mixture, flour, and sugar.
- Add in eggs and vanilla extract.
- Bake for 14 minutes.
- Top with crème fraîche whipped cream, strawberry compote, and enjoy!
Crème Fraîche Whipped Cream
- Combine crème fraîche, vanilla extract, and sugar in a bowl.
- Once it’s combined, add in heavy whipping cream and beat with a mixer until stiff peaks are formed.
Strawberry Compote
- Add strawberries, maple syrup, vanilla extract, and a splash of water (if necessary) to pan. Heat until softened.
- Top with a splash of Cointreau and continue to cook until bubbling.
