Nana McGaunn’s Chocolate Lava Cakes

Happy holidays! It’s the most wonderful time of the year – a time filled with baking, Lifetime movies, and delicious wine. As always, we’re also cooking it up in the kitchen! This month, we’re so excited to present to you our Food & Wine Series – featuring a very special recipe from Nana McGaunn. We are so thankful she shared her recipe with us, and can’t wait for you to try it at home this holiday season. Cheers!

Nana McGaunn’s Chocolate Lava Cakes

Nana McGaunn's chocolate lava cakes pair perfectly with chilly winter nights and a big glass of Orin Swift (we love Others or Locations Italian)

Ingredients
  

  • 6 oz bittersweet chocolate
  • 2 oz semisweet chocolate
  • 1 1/2 stick unsalted butter
  • 1/2 cup all purpose flour
  • 1/2 cup powdered sugar
  • 3 eggs
  • 3 egg yolks
  • 1 tsp vanilla extract

Crème Fraîche Whipped Cream

  • 1/3 cup crème fraîche
  • 1/2 tsp vanilla extract
  • 2 tbsp sugar
  • 1 cup heavy whipping cream

Strawberry Compote:

  • 2 cups strawberries
  • splash of maple syrup
  • Splash of vanilla extract
  • Splash of Cointreau

Instructions
 

Chocolate Lava Cakes

  • Preheat oven to 425.
  • Grease 6 ramekins or custard cups.
  • Heat chocolate and butter until melted together on stove or microwave.
  • In a large bowl, combine chocolate mixture, flour, and sugar.
  • Add in eggs and vanilla extract.
  • Bake for 14 minutes.
  • Top with crème fraîche whipped cream, strawberry compote, and enjoy!

Crème Fraîche Whipped Cream

  • Combine crème fraîche, vanilla extract, and sugar in a bowl.
  • Once it’s combined, add in heavy whipping cream and beat with a mixer until stiff peaks are formed.

Strawberry Compote

  • Add strawberries, maple syrup, vanilla extract, and a splash of water (if necessary) to pan. Heat until softened.
  • Top with a splash of Cointreau and continue to cook until bubbling.
