Made from organically grown grapes and no added no sulfites, this vermouth is a rarity in California. The wine oxidizes and develops naturally and slowly to bring forth the amazing dried red fruit and nutty notes. The wines used to make this spirit are barrel aged from 18 to 40 months. Matthiasson also infuses its own home-grown blood oranges and sour cherries, along with coriander seeds. The infusions were made in a base of high-proof neutral grape spirits. The bitterness that is always present in vermouth (some more than others) was a result of their home-grown cardoons, and purchased chinchona bark and blessed thistle.
