Domaine Cheveau is a family estate run by Nicolas Cheveau, his brother and his wife just on the outskirts of the village Fuisse. (Fun fact: Pouilly-Fuisse is not one village but a composite of four different villages.) Everything at Cheaveau is done by hand and naturally, and they conduct no intervention in the cellar or making process. This gives us a beautifully clean Chardonnay, all stainless fermented and then aged on its lees for 6 months. The result is a slightly smoky style with yellow apple, vanilla and almond notes. Stunning!
