Chinato is an aromatized wine. Akin to vermouth but made with an exceptional base wine. In this case Chinato’s Serralunga d’Alba Barolo. Then the family’s secret recipe of herbs, barks and spices is added. (China is the Italian word for quinine bark, a bittering agent used in Chinato.) Then everything is ground by hand. Cappellano’s recipe blend of spices is guarded closely never sharing with others what it is. In the late 1800s, Dr. Giuseppe Cappellano, who was a pharmacist, developed Barolo Chinato as a digestive aid.
